<p>Set on the slopes of Mount Etna, the largest active volcano in Europe, this vineyard hotel is a genuine hot spot (boom boom). Alongside the 15-acre winery, which produces six organic wines, this Relais&nbsp;&amp;&nbsp;Châteaux escape for oenophiles has an 18th-Century manor house and 24 villas (some with pools), scattered across a country estate filled with orchards, kitchen garden and grapevines.</p>

Rather than dressing up for dinner, simply slip on a swimming cozzie, enjoy baths, saunas and treatments, then tuck into a vegetarian supper, cooked over an open fire next to your table and washed down with a glass of Vingard’s finest. <p>Visit in September and you can learn all about grape harvesting, as this is when the fruit is gathered in the castle’s seven-hectare vineyard. Of course tastings of the four varieties of organic wine it produces are also important, in the vines or the castle’s medieval kitchen, after which Muddy recommends a lie down by one of the two swimming pools or in an exquisite suite (there are nine in total).&nbsp;</p>
