Waffles for breakfast? Yes please!
What do you get when you cross a chocolate brownie, a waffle maker and a handful of strawberries? Heaven on a plate! Sate your sweet tooth with this delicious recipe.

Chocolate brownie waffles (makes 8)

For the waffles
- 150g plain flower
- 50g cocoa powder
- 1/2 tsp bicarbonate of soda
- 1 egg, beaten
- 75g chocolate chips
- A little vegetable oil, for greasing
- 100g caster sugar
- 1 1/2 tsp baking powder
- 250ml milk
- 70g butter, melted
- 25g pecans, finely chopped
For the strawberry compote
- 200g strawberries, hulled and halved
- 2 tbsp caster sugar
To serve
- 200g strawberries
- Fresh mint leaves

Method
Sift the flour into a mixing bowl, and mix in the sugar, cocoa, baking powder and bicarbonate of soda. In another bowl, whisk together the milk, egg, butter, then add to the dry ingredients and mix well. Stir in the chocolate chips and pecans, then leave to stand for 5 minutes
Heat the waffle maker and lightly brush the cooking plates with oil. Pour a ladleful of batter into the centre of each plate, ensuring it spreads to the corners. Cook for 2-3 minutes. Repeat with the remaining batter until you have 8 waffles, lightly greasing the cooking plates each time.
To make the compote, cook the strawberries and sugar in a small pan over a gentle heat until soft and syrupy.
Serve waffles with the compote, fresh strawberries and mint.
