A new cookbook The Social Kitchen has gathered up some of those reels, posts and video recipes and put them in a book (yup, ye olde printed paper). After the summer holidays we’re running on vapours, so it’s all round to @dinner_at_hols for her Spanish traybake – it’s the kinda lazy cooking we love. Simple ingredients, cooked in one pan, slam it in the oven and serve in under an hour. Minimum effort, maximum flavour and very little washing up. Yes yes YES!

INGREDIENTS

Serves 4

500g baby potatoes
3 peppers, sliced
1 red onion
sliced 600g chicken thighs
50g chorizo, slices
3 cloves of garlic, finely grated
2 tbsp smoked paprika
1 tbsp ground coriander
1 tbsp garlic granules

METHOD

Preheat the oven to 200°c.

Cut the baby potatoes evenly into quarters so that they’re all similar in size. Put the potatoes in a large ovenproof dish along with the peppers, onion, chicken thighs, chorizo, 2 cloves of garlic, all the seasonings, sugar, and salt.

Mix well and then place the dish into the oven for 40 minutes until the potatoes and chicken are cooked through.

While that’s cooking, make the aioli by mixing the remaining clove of garlic into the mayonnaise along with a pinch of salt and a tiny bit of water, until it’s a loose consistency.

Once the traybake is cooked, remove from the oven, and drizzle the aioli on top.

Garnish with some fresh parsley, then serve and enjoy. FYI, this dinner is so delicious when served with crusty bread for mopping up all those juices. I buy the mini bake-at-home baguettes that are usually about 140 calories each.

1⁄2 tsp sugar or sweetener 1⁄2 tsp salt
4 tbsp light mayonnaise Fresh parsley, to garnish
